Chia seed pudding. This is a yummy treat that is totally guilt free! We like to eat it for breakfast sometimes or just as an easy snack. It calls for stevia instead of sugar which is a total plus!
Chia Seed Pudding
- 1 ½ cups milk (we use raw milk)
- ¾ scant cup chia seeds
- 3-6 Tbs. cacao
- stevia to taste
- 2-3 drops peppermint or orange essential oil (make sure it’s food grade. We use Butterfly Express)
Sugar Free Whipped Cream
Whip cream until soft peaks form. Add stevia and vanilla. Whip until combined.
Now for the Daily report:
For breakfast we had chia pudding! Such a surprise right? Haha We also had our World’s Best Waffles. Such a tasty morning!
Lunch was a summer salad kind of meal. We had a pasta (we like quinoa noodles for extra nutrition, they taste great) salad that was packed with good veggies. We also had a tasty potato salad with boiled eggs for some protein. Cornbread is always a good addition to summery meals so we whipped up some of that as well.
