These are tasty treats that are perfect for breakfast! They are super filling so you can just grab a couple and go! Everyone loves a quick breakfast right? They work great as a fun Easter treat too.
Energy Breakfast Bites
- 1 cup nuts and or seeds any combination/variety (we used pecans and sunflower seeds)
- ½ cup chia seeds
- 1 cup cooked wheat or kamut cooled
- ½ cup flax seeds
- ¾-1 cup raisins
- 2 Tbs. cacao
- 1 tsp. real vanilla
- coconut for rolling
Combine all ingredients in a food processor, adding enough raisins to make them sticky enough to hold together when you roll them. Roll in coconut. Store in the refrigerator or freezer (if you have any left over haha). Because of the chia seeds we make sure to drink lots of water after eating these. Enjoy!
