Green Potato Pancakes - A dye free St. Patrick's Day breakfast or dinner! #CleanEating #RealFood #March17th


St. Patrick’s Day is on it’s way! It’s such a fun holiday to celebrate with all the fun green colors. With the dangers of artificial coloring we wanted to share with you several dye free recipes that are sure to keep the party fun and healthy! These Green Potato Pancakes are perfect for just that.

Just like our Meatless Burgers and Perfect Spinach Patties an enamel baking sheet really makes these cook up just right. Brown and crispy but not over cooked. For the sauces we use ketchup or a mixture of sour cream and horseradish. Both taste just great!

Green Potato Pancakes



Grate potatoes and soak in water for 4-6 hours or overnight. In a food processor combine onion, garlic bell pepper, greens and cilantro or parsley. Blend until finely chopped. Drain and rinse potatoes to remove starch. In a large bowl combine all ingredients and stir until well incorporated. Form into patties using just enough flour for them to hold together well. Bake on an enamel or stone baking sheet at 425º for 20-25 minutes. Flip over half way through.

  5. FIVE CUPS of greens in a yummy fried food! I think we’ll have to try these! We have rarely done anything for St. Patrick’s Day except green clothes. We’re not Irish, but we’re in a city with a large Irish population and a big St. Patrick’s parade (Pittsburgh) and my toddler is really into parades right now, so perhaps we’ll go this year.
