Healthy Chocolate Zucchini Bread - Let's hear it for healthy comfort food! Love clean eating. This is a great way to use up all that zucchini

Summer = Zucchini! We love (yes love) zucchini! Our mouths water for it in the spring and then we can’t get enough of it. Thankfully when it is finally ready to harvest there is a ton to harvest. This chocolate bread is a great way to use it up when you need a healthy treat. Guilt free treats are our favorite!

Not only does this bread have a vegetable in it but it is also made with whole wheat flour, honey and maple syrup instead of sugar and cacao instead of cocoa. It’s wholesome and super tasty! We like to grate the zucchini in a food processor to make it even quicker to whip up.

Healthy Chocolate Zucchini Bread

Ingredients

Directions

Combine honey, maple syrup, vanilla, eggs and coconut oil in a large mixing bowl. Beat well. We use our KitchenAid for this. Add all remaining ingredients and mix until combined. Pour into two greased bread pans and bake at 350º for 30-40 minutes. Note: This recipe makes small loaves.

    Could you use a different oil rather than coconut oil?

    I made this today…I used white flour,don’t like wheat flour…got a lot of raves about how delicious it was at a family gathering…I made it in a layer cake pan…told them it was zucchini brownies…what a hit!

      We haven’t tried an egg substitute with this recipe however in the past we have used 1/4 cup flax seeds in 1/4 cup water. Just blend well in a high power blender. 2 Tbs. of this mixture = 1 egg 🙂

      We actually don’t have a calorie counter so we aren’t sure. For a serving we usually just do about a 1/2 inch slice. It’s pretty rich and filling so you don’t really want anymore than that. Thanks for stopping by!
