If you are a fan of Chia Seed Pudding you are in for a wonderful Christmas treat. This recipe is free of refined sugars, packed with healthy ingredients and tastes even better than tapioca pudding. All of these benefits combine to make a healthy treat that you can easily take to Christmas parties or horde in the back of the fridge so no one knows it’s there but you (we’ve never done that 😉 ). Chia Seeds are full of vitamins and minerals such as manganese, iron, magnesium, calcium and copper. Chia seeds are also high in protein, fiber, and omega-3 fatty acids. After years of searching for some peppermint candies that don’t contain artificial ingredients, we finally came across Nuts.com. Their peppermints are fantastic! We use them as a light garnish for this recipe you can, however, leave them off if you prefer. However, Christmas isn’t the same without peppermint candies so make sure you try them on top of our Last Minute Christmas Bark too!

Peppermint Chia Seed Pudding
Remember to keep your ingredients organic for optimum nutrition!
- ½ cup chia seeds
- ¼ cup honey OR stevia to taste
- 2 Tbs. cacao
- 2 cups milk of choice (raw cow’s milk, coconut milk, almond, etc,)
- 1-3 drops peppermint essential oil to taste
- crushed peppermint candies to garnish
Combine all ingredients except peppermint candies into a quart sized mason jar. Shake or whisk until all ingredients are completely incorporated. Cap tightly and store in the refrigerator for 6-8 hours OR overnight. Garnish with peppermint candies when ready to serve.
