We really love all the health benefits of sourdough (like no spike to blood sugar levels, it’s easier to digest and it helps feed the good bacteria in your gut). However we really don’t love the tangy taste! It’s just a little too strong for us to eat too often. We have been experimenting with sourdough for years now and have finally created our masterpiece… The Un-Sour Sourdough Bread. Has a nice ring doesn’t it? 😉

We have two recipes for you today. The first is our favorite classic bread which works great for sandwiches, toast at breakfast, to spread Jerk Hummus over, and everything else you use bread for. The second is super yummy French bread perfect for an Olive Party Loaf or as a nice side to Healthy Mac and Cheese.

If you are new to sourdough it can seem like a daunting process but we promise after you get the hang of it it’s super easy to make.

Classic Un-Sour Sourdough Loaf

Add sourdough starter, water, salt, oil, honey and 4 cups of flour to your KitchenAid or Bosch, using the dough hook. Start to mix. Continue adding flour until the dough starts to clean the sides of the bowl (this is a very soft dough so be careful to not add too much). Knead 6 minutes. Pour into a greased glass bowl and let sit for 4-6 hours. Turn out onto counter. Shape into 2 loaves and place in greased bread pans. We always use glass pans especially when working with sourdough. Cover with a damp towel or plastic wrap and let rise another 1-2 hours. Bake at 350º for 30-40 minutes until a beautiful golden brown. Remove from heat onto cooling racks. Let cool before slicing.

French Bread

Ingredients

Directions

In a KitchenAid or Bosch add water, starter, honey, oil, salt and 3 cups of the flour. Start to mix. Add just enough flour for the dough to pull away from the sides. This should be a very soft dough. Knead until mixed. Cover machine and let rest for 10 minutes. Repeat the mixing and resting process 6 more times. Empty into a greased glass bowl. Cover with plastic wrap or a damp cloth. Let rest for 4-6 hours. Turn dough out onto the counter and divide into 2 loaves. Shape into French Bread loaves and place into a French Bread Pan. Score 3-5 marks on the tops using a very sharp knife or a bread lame. Let Rise another 2 or more hours. Bake 400º for 25–35 minutes or until golden brown. Remove from heat onto cooling racks. Let cool before slicing.

    My husband doesn’t love sour sourdough either, so I’m going to have to try to make this for him!
