Easy Peasy Hummus. Perfect picnic food! Easy Peasy Life Matters

Picnic season is fast approaching! Hummus is perfect summer food because it is so diverse. It goes great with a veggie tray or some crackers or chips. We really like to dip a sourdough baguette in it too! This recipe is fast and easy! We hope you enjoy it 🙂

Easy Peasy Hummus

  • 2 cups cooked chickpeas
  • ¼ tsp. red pepper flakes
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2-3 Tbs. lemon or lime juice
  • 1 tsp. sesame seed oil
  • 4-6 cloves minced garlic
  • cayenne to taste

Put all ingredients in a food processor and blend until creamy smooth. Serve with fresh veggies or chips.

Note: We like to over cook our garbanzo beans so they blend up extra creamy and smooth.

We started our first day (of our Word of Wisdom 30 Day Health Challenge) off strong with a smoothie and Aussie Bites for breakfast. Smoothies are are one of our favorite ways to start the morning and when accompanied by Aussie Bites we have enough energy to go on all morning and we don’t get hungry until lunch. To make the smoothie we use a couple of big handfuls of greens (kale, chard, spinach, baby lettuces) that way we can drink our morning salad ;). Then we add yogurt along with whatever fruit we happen to have in the freezer and a banana or two! The yogurt adds great probiotics and the fruit makes it sweet so you don’t even taste the greens. Then we add coconut water, raw milk or some homemade grape juice, YUM!

Lunch was a delicious green salad with a boiled egg and a light garnish of cheese. We had sweet peppers, cucumbers, peas, carrots and everything else we could find in the refrigerator with homemade salad dressing to top it off. (Update: You might like to check out our list of 84 Salad Fixin’s for some great salad ideas!) We also made some yummy hummus! This counted as our beans for the meal and added fiber.

For dinner we had veggie burritos. Mexican food is another one of our favorites. When it’s full of brown rice, beans, guacamole, lettuce and veggies we think it’s a pretty good choice. In a later post we will share with you our roasted veggie recipe.

Alright day one DOWN! Check in with us tomorrow to see how we do! What’s your favorite thing to eat with hummus? Let us know in the comments below! 🙂
