When you have a busy life and are trying to eat healthy any kind of shortcut you can find is a lifesaver! One of the very best things we have found to date is an electric pressure cooker! The convenience is irreplaceable and in the really hot months it is a much easier way to cook. We found ours on Amazon and don’t have a single complaint. It has made our lives sooo much more simple.

This recipe has such an unusual twist that really spices up a meal. With the 4th of July around the corner we thought it would be the perfect picnic food! It’s sure to please the party 😉 If you don’t have a pressure cooker you can use a crock pot just make sure you give yourself enough time.

Jerk Hummus

Directions

Soak chickpeas in some water overnight. In the morning drain the chickpeas and add all ingredients to a pressure cooker. We use a microplane to grate the nutmeg. Cook on high for 45-60 minutes. You can also cook them in a crock pot on high heat until tender (about 12 hours). Place in a food processor and blend until smooth. Serve with chips, crackers, saltines, veggies or as a sandwich spread.
