Who’s ready for the weekend? It’s almost here which means Christmas shopping is in the near future for most of us. With all that work ahead it’s important to have a hearty meal under our belts. Instead of heading over to the closest drive-in, why not put some potatoes in the crock pot to come home to? Add some broccoli for a tasty veggie and some bacon bits with a gorgeous homemade cheese sauce and you have a meal fit for any king or queen.

We adore cheese sauce! However, we don’t like the store bought kind that is packed full of artificial ingredients. So we created our own! It’s very thick, cheesy, fast and easy (we are all about easy peasy after all 😉 ) We used a nice, clean, organic cheddar cheese in this picture which is why it’s white not bright orange. Mozzarella, a touch of blue cheese, fontina or some pepper jack for a touch of spice are all divine as well. The possibilities for a recipe like this are really endless and we have a bunch more uses coming so make sure you stay tuned!
Just a quick reminder to keep your ingredients clean and organic. Applegate has some fantastic bacon if you are looking for a good brand. Now, on to the recipe!

Homemade Cheese Sauce over Broccoli Baked Potatoes

Cheese Sauce

Ingredients

Directions

Melt butter in a medium sized saucepan. Whisk in flour and continue mixing until completely incorporated (it will be a little lumpy). Add milk and continue to stir until all the lumps are gone. Add remaining ingredients and continue to stir until all ingredients are incorporated and smooth. Remove from heat.

Baked Potatoes

Directions

Wash potatoes and puncture several times. Rub with olive oil and salt to coat very well. Place on a baking sheet and bake at 375º for and hour to an hour and a half (depending on the size of the potato). If you prefer to cook them in the Crock Pot simply cook them for 8-10 hours on high instead. Once baked, top with steamed broccoli, bacon bits and cheese sauce.
