This was a very special weekend for us! Twice a year our church holds a huge General Conference. For two days we tune in and get to listen to our leaders. Two of the best weekends of the year!
We thought that a special weekend calls for a special meal and what is more awesome than organic potatoes topped with tons of veggies?
We love packing our meals full of as many veggies as we can get. However we don’t all prefer the same veggies. Our solution to this is to line everything up in buffet fashion and let each person take what they like best. It works great! This year we added Herbed Butter to the mix. Amazing!! We got the idea from The Pioneer Woman (we absolutely love her) and it is a piece of cake to make. Nothing tastes quite as good as pure, pasture raised butter! Here’s what you need to make this yummy meal.
Easy Peasy Baked Potato Bar
Scrub potatoes clean and poke 4-5 times with a knife. Rub olive oil and salt all over them. Place on a cookie sheet and bake at 375º until tender. Depending on the size of your potatoes this can take anywhere from 1-2 hours so make sure you plan enough time.
- Herbed Butter (recipe below)
- fresh of frozen peas
- fresh or frozen corn
- sautéed mushrooms, sliced
- tomatoes, diced
- avocado, sliced
- red or green onion, chopped
- celery, chopped
- carrots, grated
- bell pepper, chopped
- lightly steamed broccoli
- grated cheese
- sour cream
- cooked quinoa
Take a softened cube of butter and add 1-2 Tbs. of fresh, chopped herbs. We used parsley and chives. Mix together and shape into a roll. Chill until firm.
