Over the past week we have shared some of our Halloween traditions with Clean Eating Caramel Apple Dip and Clean Eating Caramel Popcorn. Today we have one last tradition to share. Our Shredded Pork Tacos! We obviously have a thing for Mexican food (as seen by our Mexican Corn Dip, Mexican Quinoa Omelets and Veggie Barbecue Tacos) so this is certainly a dish that is looked forward to all year.
Every Halloween day the house is filled with an amazing aroma. We shuffle around taking care of costumes, truck or treats and trick or treaters while our noses feast on the scent. Then we all gather around, make up delightful tacos and watch another favorite movie tradition. Arsenic and Old Lace (Amazon instant video here) or The Thin Man (Amazon instant video here)! We LOVE old black and white movies and these are adorable and fun. Just scary enough for Halloween yet not too scary to sleep 😉
If you prefer shredded beef tacos you can do that as well. We have tried both ways and they are equally delicious.
Shredded Pork Tacos
- 1 large roast, pork or beef
- 1 large onion, sliced big
- 5-6 cloves garlic, whole
- 2 jalapeño peppers
- 1 bell pepper, sliced big
- 2 Tbs. Real Salt
- 1 Tbs. cumin
- 1 tsp. chili powder
- 1 tsp. oregano
- 1 tsp. black pepper
- ½ tsp. paprika
- 1-2 cups water
- cayenne to taste
In a large lodge pan sear the roast on top and bottom. Cut tops of off jalapeños and put them in whole. Add all other ingredients. If you have an oven safe pan you can now place it in the oven for 3-4 hours at 325º until cooked through. It will become very tender and just fall apart making it easy to shred.
If you would like to cook it in your pressure cooker, sear the meat and add everything into your pressure cooker. Cook at high pressure for about 95 minutes.
Once it’s fully cooked we just shred it and make yummy tacos with our Homemade Refried Beans (that actually aren’t refried), cilantro lime rice, some organic sour cream, tomatoes, avocado, green onions, olives, tomatoes and lettuce.
