This year we tried a whole bunch of new plants in our garden just for fun. One of which was this fantastic winter squash. The Pennsylvania Dutch Crookneck Squash. We cooked it up for the first time into this fabulous basil dish and we seriously thought we had died and gone to Heaven!
You can of course use any kind of winter squash (acorn, butternut, sweet meat, banana etc.) or we even think sweet potatoes would be divine. It’s incredibly fast and insanely easy to put together. We are thinking it would be a great side for Thanksgiving. Definitely a dish to steal the party!
Winter Basil Squash
- 4-6 cups winter squash, peeled and sliced
- ½ cup butter
- 1 small onion, chopped
- 5-6 cloves garlic, chopped
- ½ cup fresh basil, chopped
- ½ cup Parmesan cheese
- ½ Gruyere cheese
- Real Salt, pepper and cayenne to taste
Divide butter in half and slice into a casserole dish. Place onion and garlic in the butter. Layer in the squash and season with salt, pepper and cayenne. Sprinkle basil on top. Slice remaining butter and layer on top. Cover with glass lid and bake at 375º until the squash is tender. This should take around 45-50 minutes. Remove from oven, remove lid and sprinkle on cheese. Return to oven without lid and let bake until cheese is lightly browned and bubbly.
