If you read our post Healthy Chocolate Zucchini Bread then you know how we feel about zucchini… We LOVE it! One of our all time favorite ways to eat it is grilled. It’s one of the seasonal dishes we crave all year.
Classic Grilled Zucchini
There are no real measurements. Just use what sounds good to you! 🙂
- zucchini and/or summer squash
- oil of choice (we use avocado oil)
- Real Salt
- Simply Organic All-Purpose Seasoning (this makes all the difference)
- onion powder
- garlic powder
Put oil and seasonings in a large glass bowl. Whisk vigorously until well combined. Add squash and gently stir until combined. It’s better if it can marinate in the fridge for 2-3 hours, however, you can cook it right away. Grill on low to medium heat until desired tenderness. When we are in a hurry we like to cook it indoors on our Lodge Grill pans (here or here). Enjoy!
