These Garlic Roasted Veggies are a cinch to make and happen to taste absolutely fantastic! They have been making their way to our Thanksgiving dinner for years now and we wouldn’t want to go a year without them.

What are your family’s favorite Thanksgiving dishes?
Last Minute Garlic Roasted Veggies
- ½ cup butter
- 15 mushrooms
- 4 carrots
- 1-2 cup winter squash, cubed
- 1 head cauliflower
- 2 heads broccoli
- 6-8 cloves garlic
Melt butter on a stoneware cookie sheet. Remove from oven. Cut all veggies to about the same size (except the carrots, we like to cut them smaller because they take longer to cook). The mushrooms we leave whole or halve them if needed. Grate or dice the garlic. Add all veggies, mushrooms and garlic to the cookie sheet. Stir together to coat with butter. Bake at 425º until desired tenderness. Stir occasionally while baking.
