Beets. Don’t you just love them?! They have such a beautiful color and yummy sweetness. Beets are also very good for you! They have cancer-fighting antioxidants, help clean your blood, they are heart healthy and anti-inflammatory. What’s not to love?!
A good friend of ours introduced us to goat cheese when he brought us some that his parents made. It was love at first taste!! It’s very strong if you aren’t used to it but that is one reason we like it. A little strong cheese can’t scare us away 😉
This dish is simple to prepare and very tasty. Put it along side some Rosemary Spaghetti Squash with Wild Rice, Clean Eating Green Bean Casserole and Winter Basil Squash and you are set for a healthy Thanksgiving.
Roasted Beets with Goat Cheese
Slice butter and put in the bottom of a roasting pan or casserole dish. Peel beets and cut into bite-size pieces. We have found that a high-quality knife saves tons of time here. Lay beets on top of butter and sprinkle seasonings on top of that. Bake uncovered at 375º for 30-45 minutes stirring 3 or 4 times during the baking. Remove from oven when beets are tender and garnish with goat cheese when ready to serve.
