No one wants Thanksgiving dinner to be a hassle. Quick, easy and divinely delicious dishes are exactly what we all want. It’s even better when that dish is as healthy as it is appetizing! This potato casserole is literally our new favorite recipe! It’s one you can’t walk away from easily. It may even steal the show from the turkey 😉 You can make it the night before, for extra convenience. Just pop it in the oven to warm up and melt the cheese on the day of and you are set to go. Sweet Potato Casserole with Bacon and Blue Cheese
- 2-3 large sweet potatoes
- 4-6 medium russet potatoes
- kosher salt
- 4 oz. bacon
- 8 oz. cream cheese
- ¼ cup blue cheese
Scrub potatoes and sweet potatoes until clean. Rub skins with olive oil and kosher salt. Pierce several times. Bake on a stoneware cookie sheet at 375º until soft and tender. While potatoes are baking, cut bacon into bits. Fry until done in large pan (we like our enamel Lodge pan for this). When potatoes are done, scoop sweet potatoes out of their skins and add to the bacon pan. Cut potatoes into small chunks and add to the pan (no need to peel them, the skins add flavor). Add cream cheese. Stir until well combined. Put into a glass 8×8 pan. Lightly garnish with blue cheese. Reduce heat to 325º and return to oven and bake until the cheese melts. This won’t take long.
If you would like to save time, you can make it the night before. Follow all instructions up until garnishing with blue cheese and returning to the oven. Cover with aluminum foil and keep in the fridge overnight. When ready to bake, bake at 325º until warmed through. This should take 35-40 minutes depending on how thick your casserole is. Remove aluminum foil and lightly top with blue cheese the last 10 minutes of baking.
