Vegetable Shepard's Pie ~ Easy Peasy Life Matters

 

Shepard’s Pie is a classic! It’s tasty and full of vegetables! This is a large recipe so it is great for parties or leftovers. Don’t let the long list of ingredients scare you off! It really whips up pretty fast.
As a special bonus we have also included Mennie Lue Lue’s Biscuits! Theses are sooo light and fluffy despite the fact that they are whole wheat. We just love them! They are super fast too.

Shepard's Pie

Ingredients

  • 2 cups mushrooms
  • 1 onion
  • 4-6 cloves garlic
  • 1 cup peas fresh or frozen
  • 1 cup green beans fresh or frozen
  • 1 cup corn fresh or frozen
  • 6 carrots
  • 4 celery stalks
  • 2 cups cooked lentils (optional)
  • 2 cups spinach
  • 6-8 potatoes
  • 3 sweet potatoes
  • 6 cups milk or water
  • ¼ cup butter or water
  • ¼ cup corn starch
  • 1 Tbs. minced onion
  • 1 tsp. onion powder
  • ¼ tsp garlic powder
  • 1tsp. sage
  • 1 tsp oregano
  • ¼ tsp. rosemary
  • salt and pepper to taste
  • cayenne pepper to taste (optional)

Directions

Chop all vegetables (we use a progressive veggie chopper to speed things up a ton). Cook sweet potatoes and potatoes together as you would for mashed potatoes. Saute’ onion and garlic in butter or water until caramelized. Add mushrooms and green beans. Saute’ for a few more minutes. Add all vegetables to the pan (we use our large Lodge Pan). Continue to saute’ for 5-10 minutes. Combine corn starch with milk (or water) and whisk until smooth. Add to vegetable mixture and stir until it thickens. Pour into two 9×13 pans. Mash the potatoes and cover the tops of the pans. Bake at 375º until bubbly. Top with cheese if desired.

Ingredients

  • 1 ½ cups whole wheat flour
  • 1 ½ tsp. salt
  • 1 Tbs. baking powder
  • 2 tsp. honey
  • ⅔ cup milk
  • ⅓ cup solid coconut oil

Directions

Combine dry ingredients. Cut in coconut oil until crumbly. Add milk and honey. Knead 6-8 minutes (kneading can be done in a Bosch). Bake at 425º until golden brown.

Now for the daily report!

We started the day off with some probiotic filled yogurt and a Roasted Veggie Quesedilla with a farm fresh egg on top.

We must be in a Mexican food kind of mood because we had tacos for lunch! Lime rice and adzuki beans. Yummy!
