Breakfast is the most important meal of the day. Sometimes it’s kind of an insanely busy meal too! That’s why we like to have easy recipes already in mind to make the morning go more smoothly. These Bran Muffins are not only easy but they taste great! The fiber is an added plus and there are two different ways we have tried them, applesauce and banana!
Applesauce or Banana Bran Muffins
- ¼ cup butter
- ¼ cup coconut oil
- ½ cup honey scant
- 3 mashed bananas or 1 ½ cups applesauce
- 2 tsp. real vanilla
- 2 eggs
- 1 ½ cups whole grain flour
- ½ cup wheat or oat bran
- 1 tsp. baking powder
- 1 tsp. baking soda
- ¼ tsp. salt
- ½ cup chopped nuts of choice
Combine all wet ingredients and mix well. In a separate bowl combine all dry ingredients. Combine wet with dry and chopped nuts and stir just until mixed. This will keep your muffins light and soft. Scoop into muffin tins (we use an ice cream scoop it’s the perfect size). Bake at 375º for 20-25 minutes or until a toothpick comes out clean. Makes about 12 muffins.

Veggie wraps for lunch on a whole wheat taco shell. Wraps are super fast and you can put almost anything in them. Try them with grated carrots, cucumbers, tomatoes, lettuce, bell peppers and today we added blueberries!
We will be taking dinner into a family who’s mom just had surgery. It’s also turned off cold where we live so we are going to make total comfort food tonight! A special Chicken Chowder. We don’t have it very often but when we do it comforts mind, body and soul 🙂
