Who doesn’t love pico?! It’s a perfect summer food! We can never wait until the tomatoes come on in the garden so we can make a nice big bowl.
Easy Peasy Pico
There are no set measurements with any of the ingredients. Just add what suits your taste!
- bell pepper (any color)
- red onion or scallions
- lime juice
- salt and pepper
Chop everything up small and mix well. Serve with chips or over any Mexican dish such as our Roasted Veggie Quesadilla.

Breakfast was a special Teff cereal. This was our first time trying teff and we really liked it! It was especially good with a little fruit.
We’ve been watching General Conference today. One of the best weekends of the year! We like to just snack on all kinds of yummyness! Some of our favorite snacks are pico, a veggie tray, summer salads, popcorn, fruit and maple nuts.
Because we’ve been snacking today none of us are really hungry for dinner (funny how that works Haha). In light of that, we had a green smoothie. Gotta love those!
