Welcome back! We are already on day 5 of our Word of Wisdom 30 Day Health Challenge. Wow time goes by faster than we thought it would!
Breakfast today was our overnight oatmeal. This recipe is very fast and easy as well as being packed with good fiber! We find that we can go for hours without getting hungry. It soaks overnight and is ready when you get up in the morning. If you want to switch it up a little you just change the fruits that you top it with or you can mix up the ingredients.
Easy Peasy Overnight Oatmeal
(There are no real measurements to this recipe. It all depends on personal taste and preference)
- Rolled oats
- Flax seeds
- Chia seeds
- Sesame seeds
- Coconut flakes
- Sunflower seeds
- Slivered almonds
Combine any or all of the above ingredients in a glass bowl. Cover with water and stir. Cover with a lid and let sit overnight. In the morning add raw honey or molasses and fresh fruit. Enjoy!

Overnight Oatmeal for breakfast. Fast and easy all the way!
For lunch we had a yummy veggie pizza on our homemade whole wheat crust. (Update: You can now find the recipe we use for our pizza crust and the buns for our sliders HERE!) We like to make a few crusts ahead of time and keep them in the freezer. This speeds up the meal a ton! We like to top our pizzas with red onions, spinach, olives, artichokes, white mushrooms, zucchini and pineapple.
Dinner tonight is Black Bean Sliders and a veggie tray. When we went through our vegetarian phase we had bean burgers a lot! Even now where we are eating meat again we still love a good bean burger. Lot’s of good fiber and protein not to mention they taste great! We like them them as sliders sometimes because they are smaller and can fit on our homemade sourdough English muffins.
