Summer is a time for light, refreshing and flavorful foods. We are all trying to look our best so healthy food is a priority as well. Wait until you try these Baked Falafel Pockets! You will not believe how quick, easy and absolutely divine!
One of the healthy living tricks we’ve picked up over the years is to keep whole wheat bread, wraps and/or pita on hand. You can quickly throw together a delicious dish full of nutrition in no time at all. Whether it’s some Meatless Burgers, a Quick Asian Wrap or these fantastic Falafel Pockets, you have a fast healthy summer feast.
These Falafel Pockets are packed with nutrition. From the chickpeas and lentils to the whole wheat, yogurt and herbs, they are extremely good for you! Baking the patties is better than deep fat frying them and they taste great warm or cold for extra convenience. Another trick to make eating healthy easier is to keep cooked beans and legumes on hand. They cook up super fast in a pressure cooker and can then be used for anything from Indian Butter Chickpeas to Meatless Sloppy Joes and Stuffed Mini Peppers. They sure make these Pockets even more convenient!
One quick note: we like strong herb flavor in our food. If you like a more mild flavor you may want to only add 1 Tbs. of the fresh herbs at first. Then if you decide you want it stronger you can gradually add more.

Resources for this Recipe:
- 2 cups cooked chickpeas
- 2 cups cooked lentils
- 1 cup cooked quinoa
- 2 eggs
- 1-2 Tbs. whole wheat flour
- 2 cloves garlic
- ¼ onion
- 1-2 Tbs. fresh oregano OR 1 tsp. dried oregano
- 1-2 Tbs. fresh marjoram OR 1 tsp. dried marjoram
- 1-2 Tbs. fresh rosemary OR 1 tsp. dried rosemary
- 1-2 Tbs. fresh thyme OR 1 tsp. dried thyme
- 2 tsp. Real Salt
- ¾ tsp. black pepper
- avocado oil to grease cookie sheet
Place all ingredients in a food processor and puree until smooth. Start with 1 Tbs. of flour and work up until you can mold the patties without them sticking to your hands. Form into patties and bake on a greased cookie sheet at 425º until browned on both sides. Flip once while baking.
- 1 cup plain yogurt
- 1 tsp. lemon juice
- 1 small garlic clove, grated
- ½ cucumber, grated
- 1 tsp. dill
- ½ tsp. Real Salt
- ⅛ tsp. black pepper
- dash of cayenne
Stir all ingredients together and pour inside Falafel Pockets.
- whole wheat pita bread
- red cabbage, shredded
- carrots, grated
- scallions, sliced
- tomatoes, diced
- radishes, sliced
- Baked Falafel
- Yogurt Sauce
Take half of a pita bread, stuff with Baked Falafel, pour in Yogurt Sauce and garnish with desired toppings.
