Chickpea Lettuce Boats. Perfect for a quick snack or a healthy lunch! Easy Peasy Life Matters

 

We first had a version of these at one of our favorite cafe’s. We fell in love and crave them all the time! So we decided to make up our own! They are fast, easy and super light not to mention they are full of good healthy ingredients.

Chickpea Lettuce Boats

Ingredients

Boats

  • Romaine lettuce
  • cooked chickpeas
  • yellow mustard

Nut, Seed and Fruit Mixture

  • combination of any of the following:
  • sunflower seeds
  • pumpkin seeds
  • walnuts
  • pecans
  • raisins
  • dried cranberries
  • dried mulberries
  • dried goji berries
  • dried cherries
  • dried blueberries

Directions

Mix up you desired combination and store in an airtight container.

Sauce

This is a recipe we adapted from Melissa Chappell. We enjoy the flavor of peanuts so we added that in and gave it a little spicy kick. Check out her recipes! She has two cookbooks. None of her recipes will disappoint! Yum!

Ingredients

  • ¼ tsp. red pepper flakes
  • ½ cup raw peanuts
  • ½ cup almonds (soaked for at least five hours)
  • ¼ cup olive oil
  • ½ cup coconut aminos (or soy sauce)
  • 2 cloves garlic
  • ¼ cup honey or agave

Directions

Combine all sauce ingredients in a high power blender like the Vita-Mix. Blend until smooth and creamy.
To assemble your lettuce boats spread a squirt of mustard onto your lettuce. Top with chickpeas, nut and fruit mixture and top with sauce.
