Mexican food is our favorite so we had been meaning to make Roasted Pepper Rellenos for a very long time. Finally, we took the plunge and there is no going back! They are fantastic! We added our Homemade Refried Beans on the side and topped them with Roasted Tomatillo Salsa. Amazing!
The batter is light and resembles golden cornbread, roasting the peppers gives them great flavor and melted cheese makes any dish amazing. Remember to keep your ingredients organic to ensure it stays a Clean Eating meal.
Clean Eating Roasted Pepper Rellenos
- 7 Anaheim peppers (if you are in a huge rush you can use canned roasted peppers)
- cheese cut into long chunks (any kind, Pepper Jack is amazing)
- ½ cup whole wheat flour, plus more to dust with
- 1 egg
- ½ cup buttermilk
- ¼ cup cornmeal (we grind ours fresh using organic popcorn)
- ⅛ cup of milk (or less)
- ½ tsp. baking powder
- ¼ tsp. Real Salt
- ⅛ tsp. black pepper
- ⅛ tsp. garlic powder
- 2 dashes cayenne
Roast the peppers by placing them on a broiler pan and broiling them on high until the skins are lightly blackened. Place in a glass bowl and seal with a lid to let them sweat. Now scrape the blackened skins off lightly. In a mixing bowl add flour, cornmeal, baking powder, salt, black pepper, garlic powder and cayenne. Mix well. Whisk in egg and buttermilk. Start with a splash of milk and add until you get the desired consistency. It should be about like pancake batter. You may need as much as an ⅛ cup. Mix all together. Stuff the peppers with cheese. Dust them with flour. Dip in batter, coating as best you can. Place in a hot skillet, we like Lodge, with some melted oil (we like avocado oil). If your batter is on the thin side you may need to pour a little batter on top. Fry until golden brown and flip to the other side (we have found that this spatula works best with these). When both sides are golden brown you are done!
Topping with Roasted Tomatillo Salsa, Easy Peasy Pico, chopped tomatoes, cheese and/or lettuce makes it even better! Especially when you add Homemade Refried Beans on the side. So yum!
