We love one dish meals (like our Easy Peasy Stuffed Zucchini) and this is a classic! It has all the elements of a complete meal. Plus it is packed with veggies and basil…who could ask for anything more! And it is sooo fast, we whipped it up in about 15 minutes.
You can really use any veggies you happen to have on hand. It’s a great garden food recipe.
Creamy Basil Veggie Pasta
- ¼ cup butter
- 1 small onion, chopped
- 3-4 cloves garlic, chopped
- 25 fresh basil leaves, snipped
- 16 oz. pasta, cooked (we like quinoa pasta)
- 1-2 cups cream
- 6-8 mushrooms, sliced
- 1 small zucchini, chopped
- 2 cups broccoli, cut into small pieces
- 4 carrots, chopped
- 1 small yellow summer squash, chopped
- 16 oz. Artichokes, drained
- 2 cups kale or spinach, chopped
- Real Salt and pepper to taste
- cheese as garnish (optional)
Sauté onion and garlic in butter until they start to sweat and brown. We like to use this pan. Add carrots and broccoli. Stir and cook for 5-10 minutes until their colors deepen. Add remaining vegetables and basil. Continue to cook stirring frequently until all veggies are tender crisp. Stir in cream and salt and pepper. Pour over warm pasta and garnish with cheese.
