We have been making this recipe for years and years. We went out to the garden yesterday and had all the fresh ingredients on hand! There is no feeling quite like making a recipe straight from your garden. We’ve had our Summer Garden Salad and our Classic Grilled Zucchini… Summer is now complete! 😉
We often eat this as our whole meal because it is so balanced. It’s packed with veggies and also has a whole grain and a little bit of protein with the cheese. However these go great with our Mint Chocolate Ice Cream Sandwiches and our Raw Peanut Butter Oatmeal Cookies.
Easy Peasy Stuffed Zucchini
- 3 small zucchini
- ¼ cup butter
- 1 small onion, chopped
- 3 cloves garlic, chopped
- 1 bell pepper, chopped
- ¼ cup cilantro, snipped
- 1 cup corn, fresh or frozen
- 1 ½ cups cooked rice or quinoa
- ½ cup mushrooms, sliced
- 1 cup grated cheese
- 2-3 tomatoes, diced (We used chocolate tomatoes. Their color and flavor is wonderful.)
Cut off the ends of the zucchini and cut them lengthwise. Very gently scoop out the insides to make a bowl. Reserve and chop the insides to use in filling. Bake zucchini at 350º until tender crisp. Meanwhile chop veggies and sauté onions and garlic until they are golden brown. Add remaining ingredients except tomatoes and cheese. Heat through. Stuff the zucchini “bowls” with the filling and top with cheese. Continue to bake until the cheese is deliciously melted. Garnish with chopped tomatoes.
