This is the perfect recipe when you are in a hurry and need to fit in those veggies. They taste amazing and are super easy!
Garlic Roasted Broccoli and Cauliflower
- 1 head broccoli
- 1 head cauliflower
- 2-3 cloves garlic
- olive oil, avocado oil or butter to coat bottom of cookie sheet (we used this one for over 15 years)
In a 425º oven, melt butter on cookie sheet. Or just drizzle oil onto sheet. Cut up broccoli and cauliflower into bite size pieces. Slice garlic onto the cookie sheet and pour broccoli and cauliflower on top. Stir to coat veggies. Roast until tender stirring at least once during cooking time. These taste best when they brown slightly.
You can also drizzle a little lemon juice on top for a fun twist.
