We love it when our meals are centered around the harvest from our organic garden! We make yummy salads like our Chickpea Feta Salad and our Summer Garden Salad and we grill up some tasty Classic Grilled Zucchini. And sometimes we make up some Golden Balsamic Bruschetta that is seriously out of this world!
The key ingredient in this recipe is the Golden Balsamic Vinegar. In the past we always used regular Balsamic Vinegar. However one day we were out so we had to go with the golden. Best decision ever! You still get all the flavor of the Balsamic Vinegar however it’s not quite as tangy and strong therefore making it so much more tasty.
Golden Balsamic Bruschetta
- 1 Tbs. butter
- 1-2 cloves garlic, chopped
- 1 small red onion, chopped
- 6-7 large tomatoes, diced
- 3 Tbs. basil, snipped
- ½ cup olive oil
- ¼ cup golden balsamic vinegar
- Real Salt and pepper to taste
- dash cayenne
- bread (this one is excellent if you don’t have time to make your own)
Sauté garlic in butter until it starts to golden. Remove from heat. Add all ingredients (except bread) to a bowl and mix well. Toast bread in butter on both sides using a skillet or grill. Top with bruschetta and serve.
