We all have those crazy mornings when we need to be somewhere right away and just don’t have time for a long breakfast. Some German Pancakes or Pumpkin Cinnamon Pancakes would be nice but there’s no time. We have certainly been in this situation! Cold cereal comes in very, very handy at times like this. However, because of the dangers of most store bought cereal, we have learned how to make our own! It’s tasty, full of nutrition and a cinch to make.
This recipe is full of fiber which helps keep blood sugar levels stable, can increase energy and is filling without being fattening. It’s the perfect way to start an intense day!
Whole Wheat can have benefits like aiding weight control, promoting digestive health, aiding mental health, lowering risk of type 2 diabetes and reducing chronic inflammation.
Honey and Maple Syrup are both easier on the glycemic index and are full of vitamins and minerals.
Cinnamon contains both fiber and calcium with can protect against heart disease and help with colon health. Just the scent of cinnamon alone can boost brain function. It’s also anti-inflammatory and anti-microbial.
Cardamom is a literal powerhouse of nutrition! It contains vitamin C and B6, manganese, magnesium, iron and zinc. It can have health benefits such as helping to control cholesterol levels, aiding digestive health, improving heart health and it is anti-inflammatory. Not to mention it has fantastic flavor and is a natural sweetener!
Nuts and Seeds can help with protein, fiber, healthy fats and reduce inflammation in the body.
We like to eat ours with some Raw Milk which can be a healthy fat and help reduce the risk of allergies. It also contains vitamins A,C, D, and K2 along with calcium and magnesium.
All you have to do is make up a big batch, keep it in a glass jar and you are ready for any busy days ahead. You can use any combination of nuts, seeds and dried fruit as long as it equals a total of 1 ¾ cup. Play around with it and see what your family likes the best!

3 cups whole wheat flour (for an extra treat try Chef Brad’s WonderFlour)
¾ cup honey
¼ cup maple syrup
1 tsp. Real Salt
1 tsp. baking soda
2 tsp. cinnamon
½ tsp. nutmeg (we like freshly grated)
1 tsp. cardamom
2 cups buttermilk
1 Tbs. vanilla
½ cup pumpkin seeds
¼ cup flax seeds
½ cup coconut flakes
½ cup sunflower seeds
Combine all dry ingredients, nuts, seeds and coconut. Mix well. Add all remaining ingredients and stir until just combined. Be careful not to over stir. Spread into a greased oversized pan. Bake at 350º for 20-25 minutes or until the edges start to brown. Allow to cool. Using the same pan, break cereal into small pieces. Return to oven and continue to bake at 350º until cereal reaches desired crispness. Stir every 10 minutes while baking. Let cool and keep in a glass mason jar until ready to serve. Will keep for around 3-4 weeks.
