Healthy Mac & Cheese - And it's kid friendly! Healthy comfort food the whole family can enjoy
Who doesn’t love good ol’ Mac and Cheese? We started making our own years ago to avoid artificial colors, flavors and preservatives. Then one day we realized that we could take it one step farther on the nutrition level!

One of the people we really admire is Dr. Joel Fuhrman. He says that some of the healthiest foods to eat are onions, mushrooms and greens. We added these to our Mac and Cheese and felt like we went to Heaven! The flavor is seriously amazing. We use the food processor to chop them up extra fine for a really smooth texture and if we are in a huge rush we sauté in our amazing Lodge Pan and bake it in the same dish!  Everyone we have shared it with has been just as enthralled as we are. A perfect healthy meal for the whole family!

Healthy Mac & Cheese


  • 16 oz. Pasta (we like to use quinoa)
  • 10-15 mushrooms (any variety)
  • 1 small onion
  • 3 cloves garlic
  • 6 cups fresh spinach
  • ¼ cup butter
  • 16 oz. Sour cream
  • 8 oz. Cream cheese
  • 1-2 cans artichokes (optional)
  • 2 cups grated cheese


Cook pasta according to directions on package. In a food processor chop mushrooms, onion and garlic. Sauté in butter until they start to brown. Chop spinach in the food processor and add to onions etc. Continue to cook and stir for another 5ish minutes. Add sour cream, cream cheese and artichokes and continue to cook until the cream cheese is softened and mixed throughout. Stir in pasta. Pour into two 9×13 pans (they will be thin layers) and spread 1 cup of cheese on top of each. Bake at 375º until the cheese is melted.

To finish up the meal we served the Mac & Cheese with some carrot sticks and fresh grapes for even more nutrition.

Quinoa pasta is our favorite to use since it is lighter and we love the taste!
