When you are having a crazy day it can be hard to think up a meal that is fast and still healthy. Pasta is very quick and it’s easy to throw in whatever veggies you have on hand and go. We like the quinoa pasta best because it’s healthy and light with excellent texture.
Remember to keep your ingredients organic for optimum nutrition!
In a Hurry Pasta
- ½ cup butter
- 1 large onion, diced
- 6 cloves garlic, diced
- ¼ cups fresh or frozen basil
- 2 cups mushrooms, sliced
- 2 cups spinach, chopped
- 1 cup fresh or frozen peas (optional)
- 1 cup cooked asparagus pieces (optional)
- 16 ounces pasta
Cook pasta according to instructions on package. Sauté onions and garlic in butter until caramelized and browned. Add mushrooms and any desired additional veggies. Add basil and spinach and cook until wilted. Drain pasta and mix all together. Top with Parmesan cheese if desired. We like to serve it with a side of green beans. Yummy!
