It’s no secret that we are madly in love with grains at our house. We just wrote about Wheat as a Superfood, we’ve covered the Benefits of Phytic Acid and some of our best recipes are centered around grains (Creamy Italian Corn Salad, Forbidden Rice & Veggie Salad, and Layered Taco Salad). After our really bad experience with a gluten free diet, we love to spread the word about how amazing whole grains really are. They certainly add to the filling aspect of this dish. Then there are the chickpeas, veggies and a delightful Italian dressing. You are going to love it! First, though, a little nutrition information:

Whole Wheat Bulgur is an amazing ingredient! Wheat can have health benefits such as aiding weight control, supporting mental health, reducing chronic inflammation and it’s heart healthy. (source)

Chickpeas can aid digestion, help regulate blood sugar levels and they contain antioxidants. (source)

Did you know Cucumbers are good for your brain? They can improve memory and protect nerve cells! Cucumbers are also anti-inflammatory, help with stress management, aid digestion and help maintain a healthy weight. (source)

Radishes are high in fiber and can aid weight loss, relieve constipation symptoms, regulate blood sugar levels, prevent cardiovascular diseases and treat colon, stomach, and oral cancer. (source)

Artichokes can improve liver health, reduce risk of heart attacks, reduce levels of bad cholesterol, increase levels of good cholesterol, improve brain health and prevent prostate cancer, breast cancer, and leukemia. (source)

See? Absolutely full of nutrition. And it only takes maybe 15 minutes to make as long as the bulgur and chickpeas are cooked. Let’s eat!

Italian Herb Grain Bowl

Remember to keep your ingredients organic for optimum nutrition!

Ingredients

  • 2 cups cooked wheat bulgur
  • 3 cups cooked chickpeas
  • ¼ red onion, diced
  • 1 cucumber, sliced
  • ½ red bell pepper, diced
  • 6-8 radishes, sliced
  • ½ cup olives, sliced
  • 1 can artichokes, chopped
  • 1 avocado for garnish

Directions

Combine all ingredients and mix gently. Pour dressing over and stir gently to coat.

    This sounds so yummy! I love pretty much all the ingredients in it, though my kids might stick their noses up at everything but the cucumbers. That’s at least one thing that my kids LOVE. Though, if they improve memory, I’d better be on my best behavior…
