We lived up to our name yesterday by whipping up a super easy peasy meal! We were down to the wire and everyone was hungry. We opened up the fridge trying to face the age old question… “What’s for dinner?” We have mentioned before that we like to keep cooked beans and grains on hand to make last minute meals easier and it just so happens we had kidney beans ready to go. Dad loves Greek food and we aren’t really into a lot of meat in the summer so we created this Meatless Gyros recipe. For being a last minute meal it was unbelievably delicious! It’s kind of an unusual dish at our house and we found it very refreshing!
- 1 ½ cup plain yogurt of choice
- ½ grated cucumber
- 1 ½ tsp. minced onion
- 1 Tbs. sugar
- 1 tsp. Real Salt
- 5 cups cooked kidney beans, here or here
- 6-8 mushrooms, sliced
- 2 cloves garlic, chopped
- 1 small onion, chopped
- ¼ cup butter or oil, we use avocado oil
- 2 tsp. oregano
- 1 tsp. dill
- 1 tsp. Real Salt
- ½ tsp. black pepper
- ¼ – ½ tsp. freshly grated nutmeg, we use a microplane for this
- pita bread, flat bread or Andrea’s Homemade Tortillas
Combine all ingredients for dressing and chill until ready to use.
In a large pan combine onion, garlic and butter or oil and sauté. When they start to brown add mushrooms. When they are all browned and caramelized add all remaining ingredients and cook and stir until heated through.
Pile on bread of choice and top with yogurt dressing and chopped tomatoes, lettuce and red onion.
