We love chickpeas! They work great as a substitute for chicken, are fast and easy (especially when you cook them in a pressure cooker) and they taste fantastic! We have two really fun and unusual recipes for you here today. One is a twist on a classic Indian dish – Butter Chicken. The other is a meatless version of Chicken Shawarma.

On top of the great flavor of chickpeas they have awesome reported health benefits. Some of which are: they help with a restful sleep, reduce cholesterol, they are a good source or fiber, help control diabetes, are rich in calcium, a source of iron, help heal skin and boosts your immunity.

We like to eat beans about twice a week because of these great benefits, we have always wanted to try Shawarma (thank you Avengers) and honestly who doesn’t crave Indian food? Enjoy!

Indian Butter Chickpeas - A meatless alternative to Butter Chicken

We tried Indian food once and were hooked for life! We love the unusual and healthy spices. Talk about feel good food! Unfortunately our favorite restaurant started putting red food dye in their Butter Chicken… We may or may not have shed a few tears over that! We are so highly allergic to artificial colors that eating it wasn’t even an option so we created our own. It turned out even better than we hoped! We topped it on pink rice which was an extra fun treat.

Indian Butter Chickpeas

Ingredients

Directions

Soak chickpeas in water overnight. In the morning drain and rinse the chickpeas. Next saute onions, garlic and ginger in the butter (we do this in our Instant Pot pressure cooker). Combine all ingredients except cream in a pressure cooker and cook on high pressure for 50-55 minutes. Remove cinnamon sticks. Stir in cream and serve over rice (we like pink or forbidden rice).

Chickpea Shawarma - A meatless alternative to Chicken Shawarma

If you’ve ever seen Marvel’s Avengers movie you probably remember hearing a little about Shawarma. We had never heard of it before so we headed to Google to find some recipes. We don’t like to eat a lot of meat in the summer so we decided to create our own using chickpeas instead of chicken. Since we had never tried Shawarma we didn’t know what to expect but we were very pleasantly surprised!

We prepared it in a pressure cooker to really get the flavors to mesh and mix deliciously. It also helped keep the heat down in our kitchen during the summer. You can of course use a crock pot if you don’t have a pressure cooker.

Chickpea Shawarma

Ingredients

Directions

Saute onion and garlic in butter (we do this in our Instant Pot pressure cooker). Combine all ingredients into the pressure cooker and add just enough water to cover the chickpeas. Cook at high pressure for about 50 minutes. Note: If your chickpeas are older it might require 5 more minutes cooking time. Serve on homemade tortilla shells or pita bread. Top with toppings and Sauce.

Combine all ingredients in a small glass pitcher and whisk together until well combined. Pour over individual servings of Shawarna.
