It’s Friday! We hope you have fantastic things planned for the weekend. They may even include yummy and healthy food like these amazing Lettuce Wraps! If you are a fan of Mexican food you are about to be in love. The Pineapple Mango Salsa is out of this world delicious and the Lettuce Wraps are filling, quick and easy. Just perfect for the weekend!
You can use Romaine lettuce, kale or chard. Either way you get lots of good nutrients.
One trick we use to make healthy meals easy peasy is to have cooked grains and beans on hand as much as possible. When healthy ingredients are quick to grab you’ll pick them over a bag of potato chips. When there is a bowl of black beans and quinoa in the fridge you can quickly make a lovely Cilantro Lime Quinoa Salad, Black Bean Burgers, Meatless Sloppy Joes or some Mexican Lettuce Wraps. Whole grains and beans are some of the very best sources of fiber and protein. They give us that feeling of being full which helps us not eat as much. This is one way they help with weight loss.
Mexican Lettuce Wraps with Pineapple Mango Salsa
- 2 cups cooked black beans – or here
- 2 cups cooked grains (rice, quinoa, wheat berries, millet, etc.)
- ¼ tsp. cumin
- ¼ tsp. oregano
- Real Salt, pepper and cayenne to taste
- Romaine lettuce, kale or chard
Combine all ingredients except lettuce in a large bowl. To make wrap layer in bean mixture then top with Pineapple Mango Salsa.
Pineapple Mango Salsa
- ½ pineapple, chopped
- 2 mangoes, chopped
- 1 red pepper, chopped
- 1 jalapeño, chopped (optional)
- ¼ red onion, chopped or 6 scallions, sliced
- juice of one lime
- 1 tsp. sugar
- dash of Real Salt
Gently stir all ingredients together in a mixing bowl until combined.
