One of the reasons we like to have cooked grains and beans on hand is that it makes healthy meals super fast to whip up. This Mexican Quinoa Omelet is a perfect example of this. Adding some grains and beans make a classic omelet that much more healthy. The end result is a hearty, satisfying and nutritious breakfast. Or if you are like us they make a good dinner or snack too! 😉
There really aren’t any set measurements. Just adjust for however you and your family like it best.
Mexican Quinoa Omelets
- cooked quinoa
- cooked black beans
- olives, sliced
- onions, diced
- avocado, mashed
- tomato, diced
- grated cheese (optional)
Rewarm quinoa and black beans with some salsa for yummy flavor. Cook up your omelet and fold in half. Pile the quinoa and beans on top and garnish with the remainder ingredients.
