We have been making bean platters for years now. They whip up so fast, are perfect for parties and taste great! Quinoa adds such a good flavor and extra nutrition, fiber and protien. For a long time we just used canned refried beans but after making our own that will never happen again! The flavor is sooo much better and they are healthier for you too.
Quinoa Bean Platter
- 4 cups refried beans
- 3 cups cooked quinoa
- 16 oz. sour cream
- 1 cup grated cheese
- 1 can sliced black olives
- 2 diced tomatoes
- 1 diced bell pepper
- 6 sliced scallions ¼ cup diced purple onion
- ¼ cup finely chopped cilantro
In a glass serving dish layer in order given. Serve with corn chips.
Homemade Refried Beans
- ½ cup butter
- 1 onion
- 2-4 cloves garlic
- 1 large bell pepper any color
- 1 small jalapeno (optional)
- 1 Tbs. minced onion
- 1 tsp. organic sugar
- ½ tsp. oregano
- 1 tsp. cumin
- 6 cups soaked pinto beans (black beans will work too)
- water to cook
- salt, pepper and cayenne to taste
In butter sauté onion, garlic and peppers until golden brown. Combine all ingredients (a pressure cooker is preferred but a crock pot or a large sauce pan will work) adding enough water to cover the beans by 1-2 inches. Cook until beans are very tender, almost mushy. Let cool. Pour off half the liquid reserving for later if needed. Blend the beans until desired consistency. We like to use a stick blender, it is much easier. If beans are too thick add some of the reserved liquid.
