Our addiction to Mexican food continues! It doesn’t matter what form it comes in. Roasted Pepper Rellenos, Quinoa Bean Platter, Mexican Lettuce Wraps with Pineapple Mango Salsa, we seriously can’t get enough! Today we are sharing our Stuffed Mini Peppers. Not only are they adorable, they are also packed with flavor, are perfect for summer and are full of healthy nutrients.

Bell peppers contain vitamin C, vitamin K and magnesium. They boost the immune system, are heart healthy and can reduce inflammation. (source) In the case of this recipe, they make a delicious boat for all the yummy goodness and a great way to get your veggies in.

Add to the bell peppers some health promoting spices like cayenne, oregano, cilantro, onion and garlic. Then add the benefits of black beans and rice for fiber and protein and you have a delicious and very healthy meal. Just perfect for summer parties! Let’s eat!

 

Stuffed Mini Peppers

Ingredients

  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 2 Tbs. butter
  • 4 oz. cream cheese, softened
  • 1 cup black beans, cooked
  • 1 cup rice, cooked
  • 2 Tbs. cilantro, chopped
  • 1 cup black olives, sliced
  • 1 tsp. cumin
  • ¼ tsp. oregano
  • ½ tsp. Real Salt
  • 1/8 tsp. cayenne pepper (optional)
  • 10-12 mini peppers
  • cheese to garnish

Directions

Sauté onion and garlic in butter. Add all other ingredients except cheese and peppers. Mix until all ingredients are well incorporated. Cut the tops of the peppers and clean out the seeds. Slice in half lengthwise and stuff with 1-2 Tbs. mixture. Top with cheese and bake at 425º until the peppers are slightly tender and the cheese is melted.
