This is the perfect summer panini! It’s light and refreshing. The combination of ingredients sounds unusual but it makes for the perfect blend of sweet and savory. We bought our panini grill several years ago and use it constantly.
Tropical Basil Panini
- Fresh pineapple, sliced
- Mozzarella, sliced
- Red onion, sliced thin
- ½ – 1 Tbs. fresh basil, snipped
Using two slices of bread, butter one and place butter side down on a panini grill. Place desired amount of pineapple, red onion, mozzarella and basil on the the bread. Take second piece of bread and put on top with the buttered side up. Close panini grill and cook until bread is browned and cheese is melted. If you don’t have a panini grill use a Lodge skillet and flip halfway through cooking time.
