Don’t you just LOVE Asian recipes? They are so light, refreshing and full of flavor. Adding veggies into your diet is a cinch when it comes to Stir-Frys. They cook up real fast and are sure to please the whole family. There’s nothing better than nutritious recipes that are quick and easy too.

Although a Wok is what is traditionally used to cook Stir-Fry, we like to use our largest Lodge Pan. It cooks the veggies perfectly and quickly.

Vegetarian Stir-Fry

Remember to keep your ingredients organic for optimum nutrition!

Ingredients

  • ¼ cup olive oil
  • 1 medium onion
  • 2-4 cloves garlic, grated
  • fresh ginger to taste, grated
  • 1 bell pepper
  • 4-6 carrots
  • 4-6 celery stalks
  • 2 head broccoli
  • 1 head cauliflower
  • 1-2 cups snap peas
  • 2 small zucchini
  • 1 small yellow squash
  • 15-20 small mushrooms
  • Amazing Asian Dressing (recipe below)
  • cooked noodles OR cooked rice
  • sliced scallions and sesame seeds to garnish

Directions

Cut all veggies except snap peas to a uniform size and thickness. This helps the veggies cook more evenly. Heat olive oil in a large pan or Wok. Add onions, garlic and ginger to hot oil and sauté for 2-3 minutes. Add peppers, carrots, and celery and stir and fry for another 2-3 minutes. Add broccoli and cauliflower and continue to stir and fry for another 2-3 minutes. Add snap peas, zucchini, yellow squash and mushrooms and cook until all veggies are tender-crisp. Pour Asian Dressing over veggies and cook until heated through. Serve over noodles or rice and garnish with scallions and sesame seeds.
