The recipe we want to share with you today is one of our ultimate quick, healthy meals. When we are in a hurry for a healthy meal this is the one we like to pull out! We adapted this recipe from Harvey Diamond years ago and have been enjoying it ever since! As a busy home school family we learned right away that fast, easy and healthy were a must!
Veggie Barbecue Tacos
- 1 head cauliflower
- 1 large bunch broccoli
- 4 cloves garlic
- ¼ cup butter or olive oil
- corn taco shells
- avocados slices
- barbecue sauce of choice (we like this kind)
- grated cheese (optional)
Melt butter or oil on cookie sheet (we like this enamel one). Cut broccoli and cauliflower into bite size pieces. Slice garlic and put all on the cookie sheet. Roast at 450º until barely tender stir at least twice.
Assemble tacos by layering veggies, avocado, barbecue sauce and cheese if desired. YUM-O!
