Whole Grain Spanakopita Balls. Fast and easy not to mention they taste great! Easy Peasy Life Matters

 

We whipped these fun balls up tonight for the first time and boy are they good! It’s a fantastic way to fit whole grains into your diet. We altered this recipe from one we found by Vegetarian Times. We wanted to add some more grains and change the flavor a little. If you don’t like rice you could try quinoa. Let us know how it turns out! 🙂

Whole Grain Spanakopita Balls

Ingredients

Directions

In a food processor combine spinach, onion, feta, basil, nutmeg, eggs and salt and pepper. We use a microplane to grate the nutmeg. Blend until finely chopped. Add rice and millet and stir to combine. Using an ice cream scoop, scoop onto a greased cookie sheet. We use this one, it browns them beautifully. Bake at 375º for about 25 minutes.
Serve with a side salad.
