KFC Coleslaw The Easy Peasy Way ~ Easy Peasy Life Matters


We joke all the time about how we cannot follow a recipe to save our lives! We seriously change each one to work better for us and our lifestyle. This Coleslaw recipe is no exception. It is super fast and easy as well as being very healthy with all that good cabbage!

KFC Coleslaw (The Easy Peasy Way)


  • 1 large head of cabbage
  • 3 large carrots
  • 3 Tbs. dry, minced onion
  • ¼ cup organic sugar
  • ½ – ¾ tsp. salt
  • ¼ tsp. black pepper
  • ¼ cup milk
  • ½ cup mayonnaise
  • ¼ cup buttermilk
  • 1 ½ Tbs. apple cider vinegar
  • 2 ½ Tbs. lemon juice


Slice cabbage very thin. Grate the carrot and toss with cabbage. Combine all other ingredients and pour over cabbage mixture. Chill in refrigerator. Can be served immediately however the flavors get better with time.

Now for our daily report!

Breakfast today was some homemade Indian rice pudding, made with brown rice.. This was our first time making it and it was very yummy and filling.

For lunch we had a great big green salad with all the fixings we could dig out of the refrigerator. We have found it’s really nice to always have lots of veggies ready in the refrigerator. It has become our go-to meal. It only takes us about 10-15 minutes tops to prepare. Even faster if we have the dressings ready. We like to have carrots, radishes, boiled eggs for protein, red cabbage, beans for fiber, Bubbie’s Sauerkraut, cucumbers, olives, mushrooms (saute’d a little bit first), red onion or green onion, a little bit of strong cheese, sunflower seeds, pecans, dried fruit, the options are endless! We had a really fun Creamy Broccoli Soup… With no dairy! They said it couldn’t be done but we did it! We will be posting the recipe tomorrow so make sure you subscribe so you don’t miss it! 🙂
