Don’t get us wrong, we love dairy as much as the next guy (probably more). However we also realize that sometimes it’s easy to eat a little too much of it. That’s when recipes like our “Cream” of Broccoli Soup come in real handy. We made this one last night and seriously you can’t tell that it is dairy free. Amazingly delicious and packed with healthy veggies. It’s the best of both worlds kind of meal!
“Cream” of Broccoli Soup
- 1 large bunch broccoli
- 1 head cauliflower
- 1 large onion
- 4 cloves garlic
- ¼ cup butter (or water for Vegan version)
- 1 ½ cup raw unsalted cashews
- ½ cup nutritional yeast
- salt and pepper to taste
Saute’ onion and garlic in butter (or water) until caramelized in a large soup pan. Add all ingredients except yeast, and enough water just to cover veggies. Bring to a boil and simmer until veggies are tender. Add yeast and blend with a stick blender.

Leftover soup from last night for lunch. Let’s hear it for left overs! Even though we aren’t eating as much food any more it’s no big deal because we now have meals for more than one day!
