Cabbage Salad with Popped Sorghum ~ Easy Peasy Life Matters

 

Cabbage salad has always been one of our favorite dishes. It’s fast and easy and packed with good nutrients. The sorghum in this recipe gives it a fun and healthy twist! It tastes fantastic too! We first got the idea of popped sorghum from Chef Brad on BYU TV. You might want to look him up on Facebook! He has some terrific recipes.

Cabbage Salad with Popped Sorghum

Ingredients

  • 1 large head of cabbage
  • 6 scallions
  • 5 Tbs. sesame seeds
  • 1 Tbs. butter (for vegan version use olive oil)
  • 4 Tbs. sugar
  • ½ cup olive oil
  • 1 tsp. salt
  • 2 Tbs. rice vinegar
  • 1 tsp. pepper
  • ½ tsp. Simply Organic all-purpose seasoning
  • ½ cup popped sorghum

Directions

Slice cabbage and scallions very thin. Combine oil, sugar, salt, pepper and vinegar. Whisk together and pour over cabbage mixture. Melt butter in a sauce pan. Add sesame seeds and Simply Organic seasoning, stir quickly and constantly until golden brown. This will happen fast. Pour over cabbage mixture and toss to coat all cabbage.
Pop the sorghum in a pan with a lid (preferable a glass lid so you can watch it). Pop ¼ cup at a time. Note: Only about half of the grain will pop and they burn easy so watch closely and shake constantly.

Breakfast another delicious smoothie today! We love to pack in all those greens so early in the morning, it gives us a great start. We also had some organic energy bars with lots of whole grains.

For lunch we had the delicious Cabbage Salad with Popped Sorghum that we posted above. Trust us it’s good!

Dinner will be “fried chicken”, not really fried but it tastes like it! We will also have Garlic Roasted Broccoli and Cauliflower. It’s a great way to get in some of those great for you cruciferous veggies. For our grain we will have some whole grain pudding.

      We have been getting a lot lately too. Unfortunately we aren’t really sure what to do about it either. We’ve heard that some platforms have something called a black list where you can put certain keywords that will stop any comments that have those words in them. We have never used a black list though. Best of luck!
