This is a fantastic “chowder” with good veggies in it. The nutritional yeast gives it a chicken stock flavor without any chicken!
- 1 large onion
- 4 cloves garlic
- 6 carrots
- 6 celery stalks
- 4-6 cups corn fresh or frozen
- ¼ cup butter (or water for Vegan version)
- ⅓ cup nutritional yeast
- 1 tsp. rosemary dried
- enough water to cover veggies
- salt, pepper and cayenne to taste
Saute’ onion and garlic in butter or water in a large soup pan until browned. Add celery and carrots and saute’ another 5-10 minutes. Add corn and enough water to cover the veggies. Cook until carrots and celery are desired tenderness (we like ours a little crunchy). Remove from heat and add remaining ingredients. If you want it a little thick like a chowder then blend about half of the soup in a high power blender or with a stick blender. Enjoy!

Indian rice pudding and a couple Energy Breakfast Bites this morning. We don’t know if you love coriander as much as we do but it sure is great in rice pudding! It makes it very sweet.
Corn Chowder for lunch! Big surprise right? 😉 That is what is for dinner too! We love it so much we wanted it twice!
