Cilantro Lime Quinoa Salad ~ Easy Peasy Life Matters

 

Of all our favorite salads this one has to be at the top of the list! Quinoa is so healthy and filling not to mention just plain tasty. The cilantro and lime in combination with the veggies and beans makes it even more mouthwateringly nutritious!

Cilantro Lime Quinoa Salad

Ingredients

  • 2 cups cooked quinoa
  • 1 cup cooked black or adzuki beans drained
  • 1 yellow bell pepper chopped
  • 1 red bell pepper chopped
  • ½ red onion chopped
  • 1 ½ cups frozen corn
  • ½ cup cilantro chopped
  • 2 Tbs. olive oil
  • 4 Tbs. apple cider vinegar
  • 1-2 Tbs. lime juice
  • ¼ tsp. red pepper flakes
  • ⅛ tsp. garlic powder
  • 1-2 tsp. cumin
  • salt and pepper to taste

Directions

Combine quinoa, beans, peppers, onion, corn and cilantro. In a separate bowl whisk together oil, vinegar, red pepper flakes, garlic powder, cumin and salt and pepper. Pour over quinoa mixture and stir together. The flavor is even better as it sits a little! Enjoy!

Now for our daily meal report!

Bananas and strawberries with vanilla yogurt for breakfast. Yummy! We just love fresh fruit!

We had leftover soup for lunch. Some Corn “Chowder” and a very special Chicken Chowder that we will be sharing a little later. Don’t you love chowder on a cold day?

We are having a little celebration at our house tonight and the menu will be Panini Sandwiches with our Best Boston Baked Beans and the Quinoa Salad posted above. For a fun treat we will have fruit pizzas!
