A Little Bit of Everything Chickpea Salad ~ Easy Peasy Life Matters

 

We really like recipes that have tons of options! We have found that when we use the same base and the same dressing we can add all kinds of good stuff (whether it’s planned or just what happens to be in the fridge) for a quick meal. This recipe is a classic example of this kind of recipe! And it tastes fantastic even if we do say so ourselves 😉

A Little Bit of Everything Chickpea Salad

Ingredients

  • 4 cups cooked chickpeas (this will be your base)

Dressing

  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tsp. honey or agave
  • cilantro to taste
  • salt and pepper to taste

Desired amount of any or all of the following:

  • bell peppers chopped
  • olives sliced
  • avocado sliced in chunks
  • tomato chopped
  • carrots shredded
  • cucumbers chopped
  • red onion or scallions chopped or sliced
  • radishes chopped
  • mushrooms sliced
  • artichokes chopped
  • boiled eggs sliced
  • Parmesan cheese or feta cheese grated or crumbled

Directions

Note: If you decide to add all the ingredients you may need to make a little extra dressing.

Add desired ingredients to chickpeas. In a separate bowl add all dressing ingredients. Whisk well and pour over chickpeas mixture. Enjoy!
