Sometimes you just need a nice helping of good ol’ comfort food. If you do it right comfort food can be good for your body as well as your soul! Can’t complain about that right?!

There are several things going for this particular soup. To start with, it’s the ultimate comfort dish! Whenever anyone we know is going through a hard time or needs a little love we take them a big pan of this glorious chowder. However there are other benefits in the actual ingredients! Remember one of the most important aspects of Clean Eating is to keep your food organic. Whenever we use dairy we make sure it is raw as well. It is a healthy fat and has beneficial enzymes among other things. The right kind of Butter has great benefits and when you leave the skin and bones in the chicken as you cook it it adds collagen which is good for you bones, joints and overall health.

As long as you keep your ingredients organic there is no reason you shouldn’t cook up this soup from time to time. Besides… when your soul is happy your body is happy 😉

Clean and Comforting Chicken Chowder

Ingredients

Directions

Place chicken in a large pan (we use this one from Lodge, it makes the food taste amazing) and barely cover with water. Boil gently until cooked and tender. Remove from heat and set aside. Be sure to reserve the liquid you cooked the chicken in. Sauté carrots, and celery in butter for a few minutes, we like to let them brown a little to add flavor. Shred the chicken and remove the bones and skin. Add all ingredients back into the Lodge pan, except cream and cornstarch. Make sure to include the liquid the chicken was cooked in for extra flavor. You may need a little extra water to fully cover the vegetables. Let cook until veggies are tender. Stir cornstarch into cream and whisk together. Quickly stir cornstarch mixture into chowder and stir until thickened.

Add some Quick Rolls or Un-Sour Sourdough Bread and Coconut Cacao Bars and you have the perfect clean eating meal. Enjoy!

      We are so glad you found us! Soup is a favorite at our house. We do use cubes measuring about a half cup each (yeah a little obsessive we know LoL). You could however use whatever amount works best for your family and I’m sure it will still taste great. Thanks for stopping by! 🙂
