Sometimes you are just in a healthy comfort food kind of mood! This recipe is light and easy to whip up with fantastic flavor. The creamy sauce and pasta give it that comfort feeling but the veggies help it stay healthy. It tastes great both chilled and a little warm. If you use fresh peas from the garden it’s that much better!
Creamy Sun-Dried Tomato Pasta Salad
- 1 lb. uncooked pasta (we use quinoa pasta)
- 15 mushrooms, sliced
- 1 can olives, sliced
- 1 can artichokes, chopped
- 3 cups fresh or frozen peas
- 1 small onion, chopped
- 2 cloves garlic, chopped
- ¼ cup butter
- ½ cup sun-dried tomatoes
- 1 cup cream
- Real Salt and pepper to taste
- Parmesan cheese (optional)
Sauté onions and garlic in butter until almost caramelized. Add mushrooms. Cook pasta according to directions. Chop sun-dried tomatoes very fine. After pasta is cooked and drained place in large bowl. Add sautéed mixture, sun-dried tomatoes and all other ingredients. Toss and serve.
