Have you ever tried forbidden rice? Or ever heard of it? We hadn’t until a few months ago and it has quickly become a favorite around here. Not only does it look really cool and taste great but it also has even more benefits than traditional brown rice. Some of the benefits include being low in calories, high in fiber, a natural plant protein, full of antioxidants, can help prevent diabetes and is good for your heart. Who knew, right?! Dr. Axe has a fantastic article if you are interested in learning a little bit more.

With all these wonderful benefits and our obvious love for salads it only makes sense that we should have a special recipe! We have added even more nutrition and so much delicious flavor it’s really a dreamy salad. Carrots are anti-cancerous, help protect the liver and aid digestion. Onions boost the immune system, are anti-cancerous, and also aid digestion. Broccoli is also anti-cancerous (seems to be a theme today 😉 ), is a natural antibiotic, is rich in calcium and is a great source of fiber and protein. Cauliflower assists kidney and bladder disorders, purifies blood, is anti-cancerous and fights inflammation. Sunflower seeds improve bone and skin health, assist nerves, are full of minerals and are a great source of magnesium. Kidney beans lower risk of a heart attack, are a great source of fiber, are full of iron, help stabilize blood sugar levels, are a plant based source of protein, boost energy and are good for your kidneys.

Another thing we really love about this salad is that it can be a complete meal and is very filling. Who doesn’t love quick meals?!

Forbidden Rice and Veggie Salad



Combine all ingredients except feta cheese in a large bowl. Gently stir to mix. Pour dressing over and lightly toss. Garnish with feta cheese.




Place all ingredients in a Mason jar and shake well.
